Orach, aka Mountain Spinach,
was a popular 19th century
green that deserves a
comeback. Tender leaves with
a mild spinachy flavor are
delicious both raw and cooked.
Unlike spinach, orach thrives
in hot weather. Plants come in
a range of wild colors: lime,
deep purple, dark green,
fuschia. Succession plantings
will keep you supplied with
young leaves. 6’ seed stalks
become a garden focal point.
