Dense burgundy plumes make a rounded head from which rises the tall central stalk of the elephant’s trunk. The dramatic display lasts all summer, growing larger as the season wears on. Extremely long-lasting as a cut flower too. Plants will develop smaller side-shoot blooms if the central head is cut.
Seeds are edible, but not produced in large enough quantities to be worthwhile eating. For high seed production - not to mention tall ornamental flower spikes - please see Copperhead Amaranth, Opopeo Amaranth, and Rio San Lorenzo in the Grains section.
